Gomasio

Gomasio is a delicious condiment made of toasted sesame seeds and sea salt. Sprinkle it onto any meal to add depth of flavour—it makes simple brown rice and vegetables taste amazing. It makes a great cure for sugar overdose because of the salt and loads of calcium and other nutrients.

Ingredients

sesame seeds (unhulled if you can find them)

sea salt (grey, mineral-rich sea salt is best)

Method

  1. Use different ratios of sea salt to sesame seeds depending on the season. In winter we need more salt and in summer we need less. For winter, use 1:20 or 1:30 of sea salt:sesame seeds. For summer, use 1:40 or even less salt.

  2. Measure 1 tsp of sea salt into a dry frypan and heat until dry. Tip into a large mortar and pestle.

  3. Measure 20, 30 or 40 tsp sesame seeds into the frypan and toast, stirring constantly, until golden brown.

  4. Tip the sesame seeds into the mortar and pestle and grind while hot until mostly broken and it looks fluffy.

  5. Let cool completely and store in a glass jar for up to 3 months. Store in the fridge if you live in a hot climate.

  6. Sprinkle on top of any meals that need a little lift of flavour or salt.

  7. NOTE: To make a larger volume, use a larger measuring spoon, e.g. a 2 tsp or 1 Tb measuring spoon, depending on your ratio, or calculate the total volume and use measuring cups.
